The secret of a good leavened product
“I am an artisan in love with the art of dough. My secret lies in the fermentation process of the refreshment sourdough starter. In the Traditional Panettone and Colomba, I look for the perfect balance between butter, vanilla, and candied fruit. A good leavened product must be able to return a special sensation that intertwines with memory, family values, and timeless emotions,” is how Antonio Follador describes his recipe.
Great artisanal leavened products
All year round, and especially at Christmas and Easter, we present a collection of great leavened products, perfect for the holiday table. They stand out for their preparation with refreshment sourdough starter and quality ingredients, artisanal experience, a slow leavening of at least 24 hours, and imagination in the execution of fillings and glazes.
Panettone, Pandoro, Colomba, but also Ovo, Venexiana, Gubana, and Pan Bauletto, are incredibly soft, fragrant, and delicious sweets. They are born in our Pordenone laboratory, where a team of young artisans dedicates themselves daily to the careful and passionate production of great leavened products through artisanal techniques, in search of timeless harmony.
Venexiana
Among the leavened products is the Venexiana, a typical sweet of the Venetian tradition born from a story of creative bread recovery and a dough with refreshment sourdough starter. It comes in a double format and a variety of interpretations: Classic (800g and 400g), with a traditional dough and a topping of almonds and sugar; Apricot (1kg and 500g), with the addition of apricot drops; and Citrus (1kg and 500g), with candied Sorrento lemons and Ciaculli mandarins.
Pan Bauletti
Pan Bauletti are perfect for breakfast, enjoyed with coffee or a cold drink, and also excellent as a snack or a treat for a pleasant daily break. These “chests” of flavor are born from the skillful use of refreshment sourdough starter. The craftsmanship of gestures dictated by experience joins creativity in the pairing of flavors: The Original with Cranberries, Salted Caramel and Chocolate, Chocolate and Sour Cherries, Pineapple and Rosemary, Almond and Coffee, and Pandorato Vanilla and Lemon.
Gubana
Gubana is the typical Friulian leavened product for holidays. Its dough has a characteristic snail shape, holding a swirl of dried fruit and spices, and is softened by an enveloping soak that captures all the scents of our land. It is the dessert for special occasions, capable of evoking a sweet memory with every bite.
