Forno Follador retains Gambero Rosso’s Tre Pani award
According to the 2025 edition of Gambero Rosso's Pani & Panettieri d’Italia guide, Forno Follador remains among the best bakers in Friuli and Italy: the award ceremony took place today in Rome, presenting Antonio Follador and his team of young artisans with the Tre Pani award, the highest honor in the Italian baking industry.
Quality raw materials, selected flours—many of which are organic—and loaves like Trittico, Friulano, and Pan Fruttato make Forno Follador's stores a must-visit for bread lovers in Friuli Venezia-Giulia. Not to mention the pizzas, focaccias, and traditional Easter and Christmas leavened cakes "that are making their way across Italy": these are the reasons cited by Gambero Rosso.
"In Italy, bread is increasingly becoming a symbol of new entrepreneurial ventures. Every recipe, every flour, every loaf is a story in itself. For me, the Tre Pani award represents a significant achievement. I am very grateful to my team of young bakers, which my son Lorenzo recently joined. Together, we work on producing breads from certified, traceable, and 100% organic Italian supply chains, prepared with sourdough starter. We never tire of dedicating energy to research and applying cutting-edge technologies to improve performance in the workshop: we are organized artisans, curious to explore new scenarios in the bakery world, and attentive to sustainability and work-life balance," explains Antonio Follador.
